Just baked some coconut cakes with coconnut buttercream!
After testing all the buttercreams at work, I was inspired to try making a buttercream again. However I’m too lazy to cook some egg whites and whisk in a sugar syrup and whatnot. I like simple mixable buttercreams.
I tried numerous times to just make a simple buttercream with just butter, vanilla, powdered sugar, and milk but it’d come out sweet and too stiff.
Today I bought some shortening and sure enough it made a world of a difference! It was smooth and silky and still held a form. I did however over whip the frosting so it was airy and fluffy and when I went to pipe it, you could tell.
But still, it was delicious and easy and next time I’ll just beat it less!
